The smoked salmon is vacuum packed, so it would probably survive the journey quite nicely; it's winter, so it's fairly cold, and the journey would take about a week, I guess. Shouldn't be a problem. Buuut I'm eating it myself (sorry, Skippy), with eggs and lettuce. :yummy:

Yeee-he-he-hees... Although I did send him some DVDs yesterday, and they arrived today... quick postal service - unexpectedly quick for this backwater northern region.

That would be near to catastrophe.

I must admit I'm not quite sure what those truffles are all about, I recall some mention but it seemed so technical, and I'm not any good with "technical" food. But good thing you figured it out :)

OMG! I don't know if this stuff will be 'truffles' per say... but it's Yummy! Lord! It's RICH!

Here's what's in the pot:

3.5 lbs Ghirardelli Bitter Sweet Chocolate chips
6 sticks Land o' Lakes unsalted butter
1 3/4 cups of Whipping Cream
2 cans (14 oz each) Eagle Brand sweetened condensed milk
2 lbs Confectioner's sugar

Let me tell you, my mixing bowl was full to the top! I remelted the prior mixture that was to hard and not sweet enough in the remaining 3/4 stick of butter then added the canned milk and powdered sugar. I beat it all together until smooth with an electric mixer on low then poured it all into a 9 X 13 glass baking pan. It's almost over flowing.

Now, you have to understand that I am a card carrying choc-aholic... but this stuff is SO RICH that I couldn't eat more than a couple of fingers worth of the mixture that I scraped off the top of the beaters. I don't know what it is... but it actually IS sinfully good now! But only in very small amounts!

we hit the beach on saturday, cause it was pretty damn hot, and enjoyed some very tasty fish, squid and chips ... the squid were battered and garliced, really, really nice and the fish was NZ Hake which was also pretty damn good, yum .... ocean, sun, sand, food, just missing the alcohol :)

I found a book at my friends when I was babysitter for their cats, and OMG, it was all about chocolate! I almost started drooling and soon found stuff I HAVE to make... Like the thin stripes of citrus peals boiled in sugar and dipped in chocolate, that looked just awsome. And of course all the different kinds of nougats and truffles. Aaarrrrrrhhh! (<- the Homer Simpsons sound)
