and that may be why I don't drink stouts, or maybe I'm just weakin most cases, I'd agree with you, stefan. But like a good cheese, a good stout served cold is ruined. The cold makes the flavor one dimensional, and limits the ability of your nose to get involved in the experience.

What matters most with Stouts is whether they are fresh. I had come to think that bottled Guiness was a good drink but then I got to spend some time in Ireland and had it fresh on draft. After about 12 pints, those tin whistles started to sound pretty good.

Yes, a lot of the darker brews are better (much better) out of the tap than out of the bottle. i recall one time after finishing work at the races (back when i did leg work) we set up a keg of Hahn Premium (a fairly decent local beer) in a bin full of ice, inside a coolroom, going thru a superchiller, then thru a coldplate, had it coming out of the tap at 0.4 degrees .... that stuff went down so sweetly that we were all smashed before we'd even realised it!

Rum is for being added to foods, deserts most likely (the kind blind ppl see as moldy). When without rum you can use vodka apparently. Now if you'l excuse me i have some food to eat so i can get to deserts.
