I ended up using the Demon form maybe once in the entire game (when you were forced to) :P

Same here. I was told it was useful against spiders, but I liked to use flame arrows better. The visual effect is very cool though.

The ghoul does look similar to Gollum, no? :) Actually they are one of the nastiest monsters in the game and can cause a lot of problems if attacking in group. And they are fast.

Ghouls are not only very fast, they can climb so no shooting them from ledges in safety.
